Tofu Chicken nuggets

Tofu Chicken nuggets

Ingredients

  • 500g minced chicken breast
  • 1 pack of tofu (firm/297g)
  • 1 stick leek onion - minced
  • 3 garlic cloves - minced
  • 25g fresh ginger - minced

For the seasoning

  • 1 large size egg
  • 1 tsp fine salt
  • 2 tsp soy sauce
  • 2 tsp garlic paste
  • 1 tbsp mayonnaise
  • 6 tbsp corn starch
  • 1 tbsp chia seeds (optional)

For the sauce

  • 25g mayonnaise
  • 1 tbsp thai sweet chili sauce
  • 1 tsp soy sauce

Instructions

  • 1. Drain tofu, wrap it in paper towels and place it on a microwave-proof plate. Heat it for about 2 to 3 mins in the microwave. Remove from the microwave and place a heavy item on top to press for about 15 mins.
  • 2. In a large bowl, combine the drained tofu, minced chicken, leek, garlic, ginger and all seasoning ingredients all together. Knead the mixture well by hand or with a wood spatula until the mixture turns sticky and moist.
  • 3. In a deep fry pan, heat about 5 cm of vegetable oil over medium-high heat. Drop a few mixture in the oil and if it sizzles immediately it means the oil is ready! Using spoon, drop the mixture into the oil and fry about 3 to 5 mins per side, until they are golden brown on both sides.
  • 4. For the dipping sauce, combine all the sauce ingredients.
  • Serve hot with the sauce:)
