Ingredients
- 500g ground chicken
- 1 stick leek - finely chopped
For the seasoning :
- 2 tbsp potato starch (katakoriko)
- 3 tbsp panko bread crumbs
- 1/2 tsp sugar
- 1/2 tsp fine salt
- 1 tsp chia seeds (optional)
- 1 tsp ginger paste
- 1 tsp garlic paste
For the dipping sauce :
- 3 tbsp japanese cooking sake
- 2 tbsp soy sauce
- 3 tbsp mirin
- 2 tbsp sugar
Instructions
- 1. In a large bowl, add ground chicken, leek and all the seasoning ingredients. Knead well with your hand until everything is evenly combined.
- 2.In a large frying pan, add a bit of oil and heat over medium heat. Shape the chicken into rectangular rounds and place them to the frying pan. Cook them until golden brown on both side.
- 3. In a small pan, add all sauce ingredients and bring it to a boil. Pour the sauce onto the tsukune and dress the tsukune both side with tare (sauce). Serve with extra tare (sauce) on the side.
- Serve hot!
