Coleslaw salad

Ingredients

  • 500g cabbage - finely chopped
  • 1 onion - finely chopped
  • 1 carrot - finely chopped
  • 2 tsp salt

For the dressing

  • 2 tbsp heavy cream
  • 60g mayonnaise or more
  • 1 tbsp apple cider vinegar
  • 30g sweetened condensed milk
  • 1/2 tsp honey mustard (or just mustard)
  • a dash of pepper
  • a dash of salt to taste (if necessary)

Instructions

  • 1. In a bowl add cabbage, onion, carrot and salt (2 tsp). Toss to combine. Let it sit for about 30min to draw out excess water. Drain well.
  • 2. In a big bowl, combine all the dressing ingredients and mix. Add the vegetables from #1 and stir until combined well.
  • 3. Cover and refrigerate before serving.
