Amaranth – mentaiko

Ingredients

  • 70g amaranth - wash and drain
  • - Ingredient A -
  • 1/3 tsp fine salt
  • 1/2 tsp dashi powder
  • 1 tsp balsamic vinegar
  • 280g water
  • - Ingredient B -
  • 1 tsp thai fish sauce
  • 1 tsp brown sugar
  • 1 or 1 1/2 tsp korean red chili powder

Instructions

  • 1. In a small cooking pot, add washed amaranth and all ingredient "A" and bring to boil.
  • 2. Reduce the heat to low and simmer for about 20 mins.
  • 3. Add all ingredient "B" then increase heat to medium-high and cook until water evaporates stirring continually to prevent burning.
  • Serve with hot steamed rice, spagettie with cream, salad or with tofu as you like!
