Easy one pot chiken tomato curry

Easy one pot chiken tomato curry

Ingredients

  • 400g boneless skinless chicken thighs - cut in large cubes
  • 1 onion - chop into chunks
  • 2 carrots - roll cut
  • 3 garlic cloves - chopped
  • 1 tbsp salted butter

For the seasoning

  • 1 can of chopped tomatoes (240g)
  • 1 tbsp salted butter
  • 100ml water
  • 1 chicken stock (10g)
  • 1 bay leaf
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1/3 tsp salt

  • 1 cube curry roux (25g)

Instructions

  • 1. Heat butter in a large cooking pan, add garlic, onion, carrots and then chicken gradually. Stir them until it is hot but not smoking.
  • 2. Add all seasoning ingredient (except curry cube) and cook on high heat until it boils. Reduce the heat to simmer for about 15 to 20 mins.
  • 3. Add curry cube and then cook until dissolved.
  • 4. Serve with hot steamed rice together!

  • Note : If you like spicy curry, add Chili or use curry cube hot. That's very yummy:)
