Ingredients
- 400g boneless skinless chicken thighs - cut in large cubes
- 1 onion - chop into chunks
- 2 carrots - roll cut
- 3 garlic cloves - chopped
- 1 tbsp salted butter
For the seasoning
- 1 can of chopped tomatoes (240g)
- 1 tbsp salted butter
- 100ml water
- 1 chicken stock (10g)
- 1 bay leaf
- 1 tbsp soy sauce
- 1 tbsp honey
- 1/3 tsp salt
- 1 cube curry roux (25g)
Instructions
- 1. Heat butter in a large cooking pan, add garlic, onion, carrots and then chicken gradually. Stir them until it is hot but not smoking.
- 2. Add all seasoning ingredient (except curry cube) and cook on high heat until it boils. Reduce the heat to simmer for about 15 to 20 mins.
- 3. Add curry cube and then cook until dissolved.
- 4. Serve with hot steamed rice together!
- Note : If you like spicy curry, add Chili or use curry cube hot. That's very yummy:)
