Kinako cookies – toasted soybean flour

Kinako cookies – toasted soybean flour

Ingredients

  • 50g all-purpose flour (or 25g bread flour and 25g cake flour) - sifted
  • 30g kinako (toasted soybean flour) - sifted
  • 30g unsalted butter - at room temperature
  • 25g brown sugar
  • 20ml vanilla monin syrup
  • 1 tbsp heavy cream
  • a dash of salt

Instructions

  • 1. Preheat oven to 180C degrees.
  • 2. In a medium bowl, beat butter and brown sugar with an electric mixer on low speed. Mix in the vanilla monin syrup and heavy cream. Mix well.
  • 3. Sift flour and kinako into the butter mixture and stir well with a spatula until it is well combined.
  • 4. On a lightly floured surface, roll out the dough to about 0.5cm thickness. Cut out shapes using a cookie cutter and place them on the baking sheet you prepared.
  • 5. Bake them for about 10 mins. Let the cookies cool down completely.
