Pumpkin soup

Ingredients

  • 500g pumpkin - cut into small pieces
  • 1 onion - chopped
  • 1/2 tbsp olive oil
  • 15g butter

For the seasoning :

  • 2 bay leaf
  • 300ml water
  • 350ml milk
  • 1 tbsp and 1 tsp white sugar
  • 1 tsp sea salt

  • pepper to taste

Instructions

  • 1. In a cooking pot, heat olive oil and butter over medium-high heat. Add onion and pumpkin and cook lightly for about 5 mins.
  • 2. Then add all seasoning ingredients into the pot. Simmer the soup for about 30 minutes or until the pumpkin is tender.
  • 3. Remove the bay leaf and let it cool.
  • 4. Once it gets cold, then puree with an immersion blender or blender.
  • 5. Serve hot.
