Ingredients
- 500g pumpkin - cut into small pieces
- 1 onion - chopped
- 1/2 tbsp olive oil
- 15g butter
For the seasoning :
- 2 bay leaf
- 300ml water
- 350ml milk
- 1 tbsp and 1 tsp white sugar
- 1 tsp sea salt
- pepper to taste
Instructions
- 1. In a cooking pot, heat olive oil and butter over medium-high heat. Add onion and pumpkin and cook lightly for about 5 mins.
- 2. Then add all seasoning ingredients into the pot. Simmer the soup for about 30 minutes or until the pumpkin is tender.
- 3. Remove the bay leaf and let it cool.
- 4. Once it gets cold, then puree with an immersion blender or blender.
- 5. Serve hot.
