Yield: 80ml ice mold pop x 6

Banana coconut ice pop

Ingredients

  • 3 bananas (frozen / about 250g) - cut into small chunks

  • -A-
  • 1 tsp lemon juice
  • 2 tbsp maple syrup
  • 40ml milk

  • -B-
  • 150ml coconut milk
  • 1 tbsp white sugar
  • 1/4 tsp vanilla extract

Instructions

  • 1. In a small milk pan, add coconut milk and sugar and bring to a boil. Add vanilla extract, mix and let cool down.
  • 2. Add the ingredients "A" and lukewarm coconut milk in your blender and puree them until they are smooth.
  • 3. Pour the banana coco ice mixture evenly into ice pop mold and pop in your ice sticks then freeze for at least 5 hours or until firm.

  • Adjust the sweetness according your taste.
