Strawberry mousse

Ingredients

  • -A-
  • 250g of strawberries (and keep about 5 strawberries for decoration)
  • 300mL milk
  • 2g lemon juice
  • 4 tbsp white sugar
  • 1 tbsp vanilla (monin) syrup

  • 10g gelatin powder
  • 50ml water

  • -B-
  • 200ml heavy cream - beat until soft peaks form
  • 2 tsp strawberry powder (optional)

  • -C- For the top jelly
  • 1/2 tsp kirsch
  • 110ml water
  • 1 tbsp white sugar

  • 30ml water
  • 3g gelatin powder

Instructions

  • 1. Put all ingredients A (strawberries, milk, lemon juice, sugar and vanilla syrup) in your blender and make juice.
  • 2. In a bowl, beat the heavy cream until soft peaks form. Add the strawberry mixture and strawberry powder (optional) into the whipped cream and mix well.
  • 3. In a microwave-safe case, add 50ml water, gelatin and micro-wave it for about 15 seconds. Remove from the microwave oven and mix them to melt the gelatin.
  • 4. Pour the gelatin mixture into the mousse mixture and mix well. Spoon the mixture into your dessert serving cups. Chill for about 3 to 4 hours or until set.
  • 5. When the strawberry mousse has set, start making grenadine jelly on top:
  • -a- In a small bowl, combine kirsch, sugar and 100ml water. Set aside.
  • -b- In a micro-wave safe cup, add 30ml water and 3g gelatin. Micro-wave for 10 to 15 seconds, remove from the micro-wave and mix well to melt the gelatin.
  • -c- Add the gelatin mixture into kirsch mix (made at no. 5a) and mix well. Pour the kirsch mixture over the firm strawberry mousse.
  • 6. Add some sliced strawberries on top to decorate. Refrigerate again until set.
  • Serve with whipped cream on top if desired (to your taste).

  • Adjust the sweetness according to your taste.
