Ingredients
- 3 zucchini / 700g - peel off and cut in large chunks
- 400ml water
- 4 the laughing cow cheese portions
- 1 tsp kosher salt
- some pepper to taste
- 1 tbsp heavy cream
- 1/2 tbsp maple syrup or mirin
- dash of sugar
Instructions
- 1. Combine zucchini and water in a large pot over medium heat and bring to a boil. Reduce the heat to simmer. Cover and cook until they are tender about 20 to 30 mins.
- 2. Remove from the heat and let them cool it slightly. Puree with a blender or an immersion blender until smooth.
- 3. Put it back to the large pot over low heat, add the laughing cow cheese, salt, sugar(optional) and some pepper to taste. Stir well until the cheese has melted.
- 4. Add heavy cream and maple syrup and remove from the heat.
- Serve hot!
