Coffee Sablé – biscuit

Coffee Sablé – biscuit

Ingredients

  • 200g all purpose flour
  • 120g sugar
  • 30g Coconut fine shred - unsweetened
  • 1 egg yolk
  • 1 tbsp coffee powder
  • 1/2 tsp cinnamon powder
  • 130g unsalted butter
  • 1 tsp coconut oil

Instructions

  • 1. Fry coconut fine in a frying pan or wok until golden. Set aside.
  • 2. Add the fried coconut fine from #1 and all other ingredients into a food processor and pulse to combine. Pulse together just until a dough is formed.
  • 3. Transfer the dough to a lightly floured surface and roll into a log, about 5 cm in diameter.
  • 4. Wrap in plastic wrap and chill the dough in the refrigerator for at least 30 mins or until it has set.
  • 5. Preheat the oven to 190 C degree. Slice the log into cookies about 5 mm thick and bake for about 10 to 11 mins.
