Grilled Chicken Mexican

Ingredients

  • 1kg chicken wings / cut into flats/wingettes and drumettes

- Ingredient A -

  • 2 garlic cloves - grated
  • 1 tbsp sweet paprika powder
  • 1 tbsp mexican chili powder
  • 1/2 tbsp cumin powder
  • 2 tbsp olive oil
  • 1 tsp fine salt
  • 1/2 tbsp oregano leaves
  • 1/2 tbsp coriander powder
  • 1/2 tsp ginger powder
  • 2 tbsp white wine
  • 1 1/2 tbsp brown sugar
  • 1/2 tbsp honey
  • 1 tbsp ketchup
  • dash of pepper to taste

Instructions

  • 1. Clean the chicken wings and dry them with paper towels.
  • 2. In a bowl, add all the ingredient A and mix to combine evenly. Put the marinade in a zip lock bag (or covered) and add chicken wings. Marinate it for at least 6 hours in the refrigerator, or preferably overnight.
  • 3. Preheat the oven at 200˚C and bake the chicken wings on a baking pan lined with aluminum foil sprayed with cooking oil lightly. ( turn over once, 20 to 25 mins or nicely browned and crispy).
  • NOTE: alternatively, you can also do / In a sauce pan, add oil and saute the chicken wings. Put the chicken skin side down at first and sear on both sides until nicely browned. Then cover and simmer for about 5 to 10 mins. Remove the lid and grill over medium high heat until chicken is cooked through,turning occasionally.
