Beef stir fried rice noodle (Chow fun)

Ingredients
- 350g flank steak - slice thinly
- Ingredient A -
- 1/4 tsp baking soda (for coooking)
- 1 tbsp cooking white wine or shaoxing wine or cooking sake
- 1 tsp corn starch
- 1 tbsp light soy sauce or usual kikkoman light soy sauce
- 1 tbsp dark soy sauce
- 1 tsp sugar
- about 3 tbsp vegetable oil to stir-fry
- 3 to 4 garlic cloves - finely chopped
- 1 onion - sliced
- 300g (about) bean sprouts
- 1 leek (green parts or white parts) - cut into diagonal slices
For the sauce :
- 1/2 tsp sesame oil
- 1/2 tbsp oyster sauce
- 1 tbsp dark soy sauce or soy sauce
- 1 1/2 tbsp light soy sauce
- 1 tsp brown sugar
- dash of salt
- 300g dried flat rice noodles - soak in boiling hot water until pliable (soft) - rince and drain
Instructions
- 1. Combine ingredients A in a bowl and let the beef marinate for about 10min.
- 2. Heat 1 tablespoon of oil in a large skillet or a wok over medium-high heat until hot. Add the garlic and cook until fragrant. Add beef and sear until browned. Transfer onto the plate and set aside.
- 3. In the same skillet (or wok) add another 1 tbsp oil and onion. Stir-fry lightly and transfer onto the plate.
- 4. In the same skillet again, heat 1 tbsp vegetable oil and add the soaked noodles. Once remove from the heat, add the sauce ingredients (sesame oil, oyster sauce, dark soy sauce, soy sauce and brown sugar). Turn on the heat back.
- 5. Mix and stir-fry all together. Add the bean sprouts, leek. Then stir-fry until the bean sprouts are just tender (about 30 seconds). Finally add the marinated beef and onion. Stir-fry for a few minutes.
- Serve hot!
