Fresh pasta with Philips Pasta Maker

Fresh pasta with Philips Pasta Maker

Ingredients

Ingredients for 600g flour (for 5 to 6 people)

  • 400g fine semolina flour
  • 190g bread flour (T65)
  • 10g gluten flour
  • 216ml = 2 eggs + water
  • 3g fine salt

Ingredients for 500g flour (for 4 to 5 people)

  • 330g fine semolina flour https://amzn.to/30fHOsF
  • 162g bread flour (T65)

  • 180ml = 2 eggs + water
  • 2.5g fine salt

Ingredients for 400g (for 3 to 4 people)

  • 270g fine semolina flour https://amzn.to/30fHOsF
  • 123g bread flour (T65)
  • 7g gluten flour https://amzn.to/3fj6d4N
  • 144ml = 2 eggs + water (or 1 egg + water)
  • 2g fine salt
  • katakuriko/potato starch to dust the pasta

Instructions

  • 1. Mix the dry ingredients (semolina, bread flour, gluten flour) in a bowl. Transfer to the "Philips Pasta Maker" equipped with the spaghetti extrusion disc. Close lid.
  • 2. In a small cup, add the 216ml water mix (2 egg + water), mix well and set aside. Turn the machine on and set it to the quantity you are making. Press Start.
  • 3. Slowly pour the water mix through the opening in the lid.
  • 4. Pasta dough will begin to form and noodle will come out within a few minutes. Cut the first noodles at about 10cm length and put them back in the machine's mixing tank. That's because the first noodle is not smooth enough :-)
  • 5. The noodles will be extruded. Cut the pasta every 35cm (your choice).
  • 6. Toss the pasta with a little bit of katakuriko/potato starch to prevent sticking.
  • 7. Continue until the machine stops.
  • Enjoy your original pasta :)

    I have this machine and the directions are for no more than 500grams of flour….. does it still work with your quantities?

      If you have the same machine you can increase flour quantity to 600g. Next to the display there are actually 2 writings one is ~300g the other ~600g.
      Most of the time I cook for the kids and need to use 600g flour. Until now I haven’t had any problem.

      (Edit) : It seems some machines will prevent the use of more than 500g flour. In this case I suppose it is preferable to reduce all quantities by 16%.
      For reference my machine is a HR2355 model.

        Thank you for your reply. I tried the recipe but kept getting an error message so I made up your quantities then took out some mixture to make 500 gms…..it worked beautifully !!!

        how long do you boil the pasta for?
        In how much water do you boil?

          Hello, you don’t need to leave the past to rest, you can cook immediately. You can adjust the time for boiling. I cook a few minutes as I like hard pasta! Better boil the pasta With plenty of water :) Have a nice day!

      Follow the recipe for 4 to 5 people. It comes out to 500 g flour.

      Je vous en prie! Ici j’utilise le disque “spaghettonis” ou “thick spaghetti”. Et il ressemble *enormement* au disque a “ramen”
      On le trouvait sur amazon :

      I use just 3 ingredients: unbleached wheat flour (bleached works fine as well), eggs and water. The results are great. This is about as economical as possible and all the ingredients are easily available in any supermarket. Using plain all purpose flour makes it suitable in both European and Asian recipes. I serve it with pasta sauces if I’m in that mood for Italian, or stir fry it (or serve with soup) when I want Asian. I am making Chinese lo mein tonight

    Good morning . i just bought the Philips HR 2375 and would like to know if i can use the flour DecCecco ” Di Grana Tenero “00” ? will the recipe change ? i would like to use eggs in my pasta making , can you please indicate whee i can obtain a good receipt, as the Philips hand book do not give such a recipe I thank you in advance

      Hello,
      I think you can replace the bread flour (french T65) with your italian “00”. I suppose it should work as fine. Enjoy making!

      Hello, it’s depned on how you like the texture. Add in the boiling water and I usually cook about 1 to 2 min. Please adjust the time depend on you cook for how much pasta at a time…

      That depends on the thickness of the pasta and how chewy you like it. For most people and most pastas, 2-4 mins is good. I generally use 3 mins. When I’m making Italian dishes, I like my pasta al dente, so 2-3 mins works. Asian dishes call for softer pasta so I may do 4-5 mins. One of my Chinese friends likes her pasta in soup very soft so I cook it 7 mins for her.

    thank you for these great recipes I brought my machine around 2 months back and the recipes that come with it worked but there was a lot of waste and didn’t want to go through eazy but with your recipe it worked great and fast also does anyone know where i can get die for4 thicker speggtetie from

      Thanks for the kind words! I think I got the 2mm spaghetti disc from Philips Japan. I suppose it can be found overseas too but havent checked recently.
