Stir-fried green beans with ground pork (or ground beef)

Ingredients

  • 300 to 400g ground pork or ground beef
  • 400 to 500g green beans - cut into half or bite size
  • 80g zha cai - finely chopped
  • 2 tbsp PS olive vegetables HK
  • 2 tbsp vegetable oil
  • 30g fresh ginger - finely chopped
  • 2 garlic cloves - finely chopped
  • 1 dried chili
  • 1 leek (about 130g) - finely chopped

- Ingredient A -

  • 1 tbsp sesame oil
  • 1/2 tbsp sweet bean paste / tian mian jiang
  • 1/2 tbsp dark soy sauce
  • 1 tsp soy sauce
  • 2 tsp brown sugar
  • 1 tsp sichuan peppercorn oil
  • 1/2 tbsp garlic powder (option)

Note

  • You can substitute "PS Olive Vegetables HK" with "Tian jian preserved vegetable".

Instructions

  • 1. In a large pot of salted (1/2 tsp salt) boiling water, cook the beans until just tender, about 4 to 5 minutes. Drain and rinse under cold water. Set aside.
  • 2. In a wok or frying pan, heat 2 tbsp oil and fry garlic, ginger and zha cai. Cook until fragrant. Add leek, PS olive vegetables HK and ground pork (or ground beef), continue to stir-fry until the leek and pork are almost cooked.
  • 3. Add dried chili (optional) and the ingredient "A" to season, cook for about 1 min. Then add green beans, stir for another minute.
  • Serve with steamed rice.

Ingredients

  • 700g (approx) white fish fillets - I used haddock
  • Pepper and salt to taste

- Ingredient A -

  • 50g panko/bread crumbs
  • 1/2 tbsp garlic powder
  • 1 tbsp aonori / seaweed
  • 25g mayonnaise
  • 2 tbsp tsuyu
  • 20g butter - cut into thin slices

Instructions

  • 1. Sprinkle both sides of the fish pieces with salt and pepper. Set aside.
  • 2. In a small bowl, add "A" and mix well. Pre-heat the oven to 180℃ degree.
  • 3. Arrange the fish fillets on the prepared baking sheet or in a lightly buttered baking dish.
  • 4. Spread the panko/bread crumbs mixture over the fillets. Sprinkle the butter over it.
  • 5. Place in preheated oven and bake for about 30 to 35 minutes.
  • Serve hot!

Chicken cream spring rolls

Ingredients

  • 1 packet of spring roll wrap (50 papers) - used 12.5cm x 12.5cm
  • 35g fresh ginger - finely chopped
  • 6 garlic cloves - finely chopped
  • 520g skinless chicken breasts - finely chopped
  • 1 leek - finely chopped
  • 130g brown mushrooms - finely chopped

- Ingredient A -

  • 40ml white wine
  • 1 tsp kosher salt
  • 1 tbsp tamarind paste
  • 60g heavy cream
  • 1 tbsp hoisin sauce
  • 1 1/2 tbsp sweet chili sauce
  • 1 tbsp worcestershire sauce
  • 1 tbsp soy sauce
  • 1/2 tsp sugar
  • 1 tsp ginger powder
  • 60g grated cheese
  • 1 1/2 tbsp katakuriko/potato starch - dissolve in 2 tbsp water

For the glue

  • 2 tbsp flour - dissolve in 4 tbsp water

Instructions

  • 1. In a skillet, heat 1 tbsp vegetable oil and fry ginger and garlic until fragrant.
  • 2. Add chicken, leek and brown mushrooms and fry them until chicken is no longer pink. Add all the ingredient A and stir to season.
  • 3. Add katakuriko/potato starch (dissolved in water) to thicken the mixture. Let it cool to room temperature.
  • 4. Lay a spring roll wrap flat, tip down. Place the filling mixture centered in the lower tier of the wrap. Roll up tightly. Dab a little 'glue' mixture along the edges to seal. Repeat until you finish the filling mixture.
  • 5. Pour enough oil in a wok or large saucepan and heat on medium-high until hot : Stick in a bamboo chopstick, if bubbles appear, it's hot enough :-). Place the rolls gently in the oil and cook both side, turning occasionally, until nicely and evenly golden. Transfer them to a plate lined with paper towels to drain the excess oil.
  • Repeat with the remaining spring rolls.
  • Serve hot!
